This savoury tart with leeks, potatoes and ham is an excellent solution for a quick and appetising dinner.
Wrapped in a shell of crispy shortcrust pastry, leeks have a strong flavour, potatoes give softness and the addition of cream and grated cheese perfectly balances the mix. If you want, you can prepare the shortcrust pastry from scratch.

Ingredients (for a 26 cm baking tin)
• 1 sheet of store-bought shortcrust pastry
• 1 small leek
• 2 medium potatoes
• 200g cooking cream
• 160g cooked ham
• 1 egg
• 30g grated Grana Padano
• salt, pepper, extra virgin olive oil
Instructions
- Wash the leek and slice it thinly. Pour a little extra virgin olive oil in frying pan, add the leek and the cooked ham cut into strips. Season with salt and cook for fifteen minutes, stirring constantly. If it gets too dry, add some water.
- Peel, wash and cut the potatoes into thin slices, then place them in a pot of salted water and bring to a boil. Once cooked, drain and allow to cool.
- Combine the cooking cream, the egg, the grana and the pepper in a bowl.
- Roll out the shortcrust pastry to about 4 mm thick and place it in the baking tin with the supplied parchment paper. Prick the shortcrust pastry all over with a fork.
- Combine the potatoes with the leek and the ham. Fill the shell with the warm vegetable and spread it evenly with a spoon. Pour the emulsion of cooking cream and egg over the whole surface. Close the shortcrust pastry flaps around the filling.
- Bake in a preheated fan oven at 200°C for about 20 minutes or until golden.
